Chhettri
The Chhettri were one of the groups of the Khas Hindu community, one of the highest levels of the old caste system. They were the Kshatriya warriors who were the defenders of the system. Although the caste system no longer exists officially, it is still very important in the Khas communities in the centre of the country.
Together with the other Khas, they make up about 30% of the population. They are located in the so-called Mid-hills not far from Kathmandu.
They are Hindu, which of course is reflected in their food culture, for example, many do not eat beef or drink alcohol.
Food is also usually divided into two categories, pure (chokho) and impure (bitulo). There are also fasts linked to religious holidays, when no meat is eaten. Rice is the staple crop of these communities, served with many dishes, but it is also part of various Hindu traditions. For example, the bhat khuwai, or rice-feeding, when babies are given solid food for the first time. This ritual is called Pasni and is celebrated all over the country.

Rice is also used in the preparation of various sweets, such as Selroti. It is made from rice flour, kneaded into a sweet dough, then shaped into rings and deep-fried in hot oil.
